happy valentine's day 2013!

In case you are wondering, taking care of twin two year olds and a 14 week old puppy isn't easy. Yesterday was one of the worst days so far.... I felt like I was in a bad sitcom with way too many crazy things happening all at once and one right after the other. It was absolutely ex. haus. ting. It was all typical stuff...peeing and pooping puppy (two feet of snow outside makes it VERRRY DIFFICULT to potty train a wee pup!!!!), screaming and whining babies, a crying and frustrated little girl after school, and all day -- ALL DAY -- cleaning up mess after mess...after mess....after mess.....now with added chewed up toys, boots, hats, mittens to the mix of toys...not to mention all the pee and poops everywhere -- on the floor, in the diapers....and more diapers.....

And, to add to the craziness....I made these for Soren and Anna Clara's valentines and Anna Clara's class party:
lollipops for the valentines and cream-filled cookies for the class party
Very surprising to me, Mr. Incredible sent me a dozen roses, 4 balloons for the kiddos and chocolates. That's a first. Maybe he misses me in Chicago. Almost as much as I miss him.
The kiddos requested the lollipop valentines again. They came home very proud that they were the only ones with homemade valentines. What? Remember when EVERYONE made homemade valentines??

The boys enjoyed the leftovers.

When putting the kidlings to bed last night I asked them each what she/he was looking forward to most about Valentine's Day.

Anna Clara said, "the treats."

Soren said, "the day after I get to see Daddy."

He's a heartbreaker and a love of my, and daddy's, life.
He worked into the dark evening hours to build a fort and a snowman. A boy after my own heart!

HAPPY VALENTINE'S DAY!!!!

limbo

In dictionary.com, "limbo" is defined, in the third and fourth definitions, as:
3. An intermediate, transitional, or midway state or place.
4. A place or state of imprisonment or confinement.

Those are both pretty darn accurate descriptions of where I am right now. Only one potential buyer has come to see our home (only just this past weekend! After being on the market for 3 months!), Jim is home one weekend a month -- except for the bonus week Hurricane Sandy gave us -- and neither one of us have any idea how long our family is going to be apart...but we know it will be a very long time. We will be here at least until June since we may as well keep the kidlings in school until the end of their school year. After that, if we haven't sold our home, who the heck knows. Most likely we will lose quite a bit of money in the process of desperately trying to sell our home so we can afford to finally buy one in Illinois.

It seems so strange to live in a home that feels so perfect for our family, in a location we love so much, with a garden so perfect for my farm boy, with so many friends we love and cherish, and know that we have to leave it all within the next year. It feels like when you try to slooooowwwwly take a bandaid off of a bad wound, rather than ripping it off and getting it over with -- it may be more painful, but at least the pain isn't agonizingly long and like the dang bandaid will never come off....while at the same time thinking maybe the longer it takes to get it off, the better it will feel????

Yep. That's about right.

So, as that bandaid has slooooowly been ripping off, here is a glimpse into the past 3 months without a husband living at home (since I know you are just dying to know....):

We had a very brief snowstorm early in November...and haven't had one since.

Our first -- and only? -- snowman of the winter!

My snow-loving pup.

I have been canning jams and tomatoes like crazy...knowing they will be the last from our NH garden. I made peach jam from the very first peaches from our orchard...for the first and last time..... *sigh*
raspberry and peach jam
This is but a sampling of the variety of veggies I cut up, pureed, froze, cooked, canned, etc...etc...., but barely a handful in number compared to the bushels and bushels and bushels and bushels and bushels of veggies Mr. Incredible grew and picked...and left for me to prepare for the winter.....

I have also been doing quite a bit of baking to keep me sane...and well-padded for the winter.....
Three different caramels (apple cider, salted chocolate and regular) I made and mailed to some friends who have had an even tougher few months than I.
The best pumpkin muffins in the entire world. I make them every fall...and as long as I have any frozen, pureed pumpkin I prepped from the garden. They are just as good with canned, store bought pumpkin though.

And while I work in the kitchen, my boys make messes everywhere they go. The messes never -- EVER -- end.
Yep. An entire roll of toilet paper in the toilet. Twice. In one day. The second time the consequences were a bit more harsh...therefore it hasn't happened since. But I ain't holding my breath that it won't happen again!

Because it is December, it is time for constant, all day, every day Christmas music (Hallelujah! Oh how I love me some Christmas music!!!!) and the magic of Christmas with four little ones. I barely decorated this year since my storage space is jam-packed with stuff I had started to box up for the move...that I thought would come sooner...and I couldn't get motivated enough to dig through the boxes to get out all the decorations...and then have my house look "cluttered" if a potential buyer were to actually come look at our house...... BUT, my children would not be able to live without their Christmas village our dear and generous friends gave us -- and add to every year. All four of them spend hours in this little spot. Unfortunately the boys have terrorized the village to the point where it looks a bit like Hurricane Sandy came through...they simply can not resist touching and destroying exploring. Besides, it's Christmas, and everything Christmas is meant to be thoroughly enjoyed.

At about 4pm every, single day, this is how I feel:
I simply want to drop down and rest and let the world pass me by.

But I don't...because, every, single day there is still homeworking, dinner prepping, feeding, cleaning, screaming, whining, reprimanding, crying, consoling, playing, cleaning, bathing, dressing, reading (x3...once to each age group), singing, rocking, praying, good nighting, kissing, hugging, one-on-one-ing, cleaning, and, finally, snuggling into my sweet, sweet bed......with my laptop so I can catch up on emails, reading, tivo'ing and, finally tonight, update my blog.

Sometimes, just sometimes, my little man (or little lady...who is learning to read so fast!) fills in for my big man and reads to my boys to lighten my evening load.

But I sure miss my big man. It's so dang lonely being a single mom. Kudos to all who do it, have done it and continue to do it without an end in sight. At least I know my Mr. Incredible is waiting for me in Chicago. Some day his wife and children will join him and we will be whole again. Some day.

In the mean time, I will try to appreciate all the moments of Christmas joy that I can with four lil ones. However, lately, I have been especially enjoying the Christmas moments when the children are nestled all snug in their beds.....
Out of the blue last night they decided they both wanted the same crib. So I let them both have it. And they slept just fine. Thank heavens.

Merry Christmas to all and to all a good night!!!!

happy valentine's day!!

In her excited anticipation of Valentine's Day, last week Anna Clara made Valentine hats for everyone...including her doll, of course.

I made (and the kidlings decorated) two double batches of cookies for the kindergarten and 2nd grade classes...which took way longer than I expected it to.
This is the second double batch -- lollipop valentines for them to hand out in class.
Anna Clara cut out green hearts and Soren cut out red hearts and they wrote the names of their classmates on each heart.
Better than cheesy store bought cards, dontcha think?

yumminess

As anyone who knows me knows, I looooooove to cook and I loooooove to eat. I haven't shared very many recipes on this blog because I keep thinking I am going to start another one with only recipes, cooking tips, etc. Cooking is my passion and one of these days I would love to share it! One of these days...... For now, I can barely keep this journal/blog going and updated. Barely.

Anyway, a friend requested in her comment below that I share this Chocolate-Pumpkin Cheesecake Bar recipe and boy, these are so scrumptiously delicious I did not want to share the last couple...and I didn't. I kept the last two hidden in my fridge and I just devoured them. One right after the other. I couldn't leave one all alone, hidden by itself, cold and lonely in my fridge. Ok...ok....I have NO willpower. None.

  • Crust

    • 20 chocolate wafer cookies (half a 9-ounce package)
    • 2 tablespoons sugar
    • 4 tablespoons unsalted butter, melted
  • Filling

    • 2 packages bar cream cheese (8 ounces each)
    • 1 cup sugar
    • 1 cup canned solid-pack pumpkin puree
    • 3 large eggs
    • 3 tablespoons all-purpose flour
    • 1 teaspoon pumpkin-pie spice
    • 1/2 teaspoon salt
    • 4 ounces semisweet chocolate, chopped
  1. Preheat oven to 350 degrees. Line bottom and sides of an 8-inch square baking pan with parchment paper or aluminum foil, leaving an overhang on all sides. Set aside.
  2. In a food processor, blend cookies with sugar until finely ground (you should have about 1 cup crumbs); add butter, and pulse until moistened.
  3. Transfer crumb mixture to prepared pan, and press gently into bottom. Bake until fragrant and slightly firm, 12 to 15 minutes. Set aside to cool.
  4. Place cream cheese in food processor; blend until smooth. Add sugar, pumpkin puree, eggs, flour, pumpkin-pie spice, and salt; process until combined. Set aside.
  5. Place chocolate in a microwave-safe bowl; microwave in 30-second increments, stirring between each, until melted. Add 1 cup pumpkin mixture; stir to combine. Set aside.
  6. Pour remaining pumpkin mixture into prepared pan. Drop dollops of chocolate mixture onto pumpkin mixture; swirl. Bake until cheesecake is set but jiggles slightly when gently shaken, 40 to 50 minutes.
  7. Cool in pan. Cover; chill until firm, at least 2 hours (and up to 2 days). Using overhang, transfer cake to work surface. With a knife dipped in water, cut into 16 squares. Serve.

dads are good

Happy Father's Day to my two favorite dads....

Dads (and grandfathers) are totally underrated.

Behind every good dad there's a great mom (and every good dad knows that -- am I right daddy-os?) making yummy treats for him...like this banana cream pie I made for Mr. Incredible. It was dang good, lemme tell you.

sweet love

these are the most chocolaty chocolate cookies...perfect for a true chocaholic like me....

For some reason, the past few weeks I have done one heckuva lot of baking of Valentine sweet treats. After the holidays, all my two older ones talked about was that Valentine's day was coming...so I prepped for the Day of Love with lots of heart treats (with the help of their lil hands of course!).

these are reminiscent of the "pink cookies" I used to gobble up in college

I made these red velvet cupcakes for Soren's class valentine party

these were Soren's valentines he handed out; he made the pink hearts and wrote every child's, and teachers', name

Anna Clara loves to paint, so she painted a sheet of paper with all sorts of colors then cut out the hearts. I forgot to take a picture of the whole group of them -- they were so pretty! The teacher did not like it that she didn't write her name on each of them... It was hard enough to get her to cut out the hearts, believe me!!

Other than baking, I've been taking care of my other sweet loves....

my love pimps (I took this picture a few months ago, but these outfits have hearts on them so I just had to post them today.)

This is how my boys spent most of their Valentine's day...and every day....

All my little sweet loves!! (Soren and Anna Clara took turns taking pictures...lots of pictures...and these two were the only ones worth sharing. My big sweet love came home too late from work to join the love fest....)

I hope you had a Valentine's Day filled with sweet treats and sweet loves!!

mmm-MM!

There are few things better than homemade bread...warm and fresh from the oven...flaky-crunchy on the outside, soft and spongy on the inside...and the smell! Oh that yummy, goodness-to-the-core, comforting smell.....

mmmmmm-MM!!!!

I've been feeling sooooo GOOD these days -- no more nausea, lots of energy and sometimes I even forget I'm preggers...until I look in the mirror...or bend over to pick something up.... My belly is rather large and getting bigger every single day. But, I'm not hungry all the time and I'm not eating NEARLY as much as I was a couple weeks ago -- which is a very good thing.

Since my OB and some mothers of twins have told me this will most likely be my last month of feeling good, I have been frantically getting one heckuva lot done.... I think I have been able to get more done in the past three days than I did the entire last three months! I just wish I could feel like this the rest of the pregnancy...but I'm thinking that might be too much to hope for as a momma with two growing babes inside her belly. I am sure enjoying every second of it while it lasts, believe me! And feeling the babes kicking and rolling around inside me simply never gets old....at this stage anyway (I may feel a bit differently when my belly is stretched to the max in a couple months!).

fan of food and football

I love food. I mean I reeeeeally love food. I love to cook, bake and eat....lots. I saw this recipe in one of my favorite foodie magazines and HAD to try it -- even though my pregnancy nausea is only made worse with sweets (oh the horror for a chocoholic and baked goods fanatic!). I couldn't help myself. I just had to make these dang doughnuts. However, they sounded a bit better than they tasted -- but mostly because I am very particular about the balance between caramel and, well, whatever is with caramel. I loooove caramel (almost as much as I love chocolate) and these didn't have enough caramel in them because it melted out of the donuts. My fryer was filled with wasted caramel and I was devastated to have missed out on all that yummy gooeyness.... However, for whatever reason, I just wanted to share that I had made them. Don't worry, they didn't go uneaten. They were delicious. Pure indulgence. Just not enough caramel for my taste.

While I'm at it...later on this day of doughnut-making was a Big Game. Mr. Incredible is from Green Bay, so guess who we root for in our home?

I just had to share because, c'mon, is that one cute cheerleader or what??

Too bad they lost. Oh well. It sure wasn't because of a lack of fan support in THIS family!!
